Grilled Salmon with Avocado Salsa


It's grilling weather!! Time to get outside and grill anything you can find. Okay maybe not anything, but I bet you could find something. :) If you don't have the ability to grill outside I will strongly suggest getting a cast iron grill pan. That pan as gotten so much action in my kitchen in the winter time when it was impossible to grill outside. The cast iron still gives it a little bit of a smokey flavor and always produces beautiful grill marks, you know if you are like me and like your food to look pretty.

Along with grilling it's also a great time for avocados. So many things to get out a do after being stuck in the house for months with freezing temperatures and snow. Now get outside and fire up that grill with this light and fast seafood meal. If you wanted to grill a different type of fish go for it, I have always preferred salmon. Plus salmon is a great fish that holds up to grilling.



As for the salsa you can really do anything you want to it. I actually differed from the original recipe and added the jalapeno. If you want a little bit of kick but not a sucker punch of spice, remove the seeds and membrane from the pepper and you'll be good. Who could say no to that right? :)










Grilled Salmon with Avocado Salsa

Ingredients:
2 lbs salmon, cut into 4 equal pieces
1 tbs extra virgin olive oil
1 tsp salt
1 tsp ground cumin
1 tsp smoked paprika (smoked will add a little extra flavor if you desire)
1 tsp onion powder
1/2 tsp chili powder
1 tsp red pepper flakes (more or less to taste)
1 tsp black pepper
Avocado Salsa
1 avocado sliced or diced, however you like
1/2 small red onion, diced
1 small jalapeno, finely diced
Juice from 1 lime
1-2 tbs finely chopped cilantro (or 1 tbs dried)
Salt to taste

Direction:
  1. Mix salt, cumin, paprika, onion powder, chili powder, red pepper flakes, and pepper together. Drizzle salmon with oil and gently rub in seasoning mix.
  2. Refrigerate for at least 30 minutes.
  3. Meanwhile combine the avocado, onion, cilantro, jalapeno, lime juice, and salt in a bowl and mix well, slightly mashing avocado. Chill until ready to use.
  4. Grill the salmon to desired done-ness.
  5. Top with avocado salsa.
